Ingredients
  

  • 2 cups  All-purpose flour
  • 2 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground cloves
  • 1/2 cup Molasses  
  • 1/2 cup  Brown sugar
  • 1/2 cup  Vegetable oil
  • Eggs
  • 1 cup  Hot water

Instructions
 

  • Preheat the oven to 350°F (180°C). Grease the muffin tin or use liners.
  • In a large bowl, whisk flour, baking powder, soda, salt, and spices.
  • In a separate bowl, whisk molasses, brown sugar, oil, and eggs.
  • Combine wet and dry ingredients; stir until just mixed.
  • Gradually add hot water, and stir until smooth batter forms.
  • Divide batter evenly among muffin cups.
  • Bake for about 20-25 minutes until the toothpick comes out clean.
  • Let muffins cool for 5 minutes in a pan, then transfer to a rack.
  • Enjoy these delightful gingerbread muffins!

Notes

  • Add Nuts or Raisins: For more texture and flavour, add chopped nuts or raisins to the muffin batter before baking.
  • Glaze or Frosting: Drizzle the muffins with a simple glaze or cream cheese frosting for extra sweetness and a beautiful look.
