Heat your oven to 350 degrees Fahrenheit.
Line your cookie sheet with parchment paper.
This prevents cookies from sticking to pan.
Set the prepared sheet aside for now.
Beat softened butter in a large bowl.
Add both white and brown sugar gradually.
Mix until the mixture becomes light and fluffy.
This should take about three minutes total.
Add peanut butter to the butter mixture.
Crack in the egg and vanilla extract.
Mix everything together until smooth and creamy.
Make sure there are no lumps remaining.
Mix flour, baking soda, and baking powder.
Add the pinch of salt too.
Stir these dry ingredients together in bowl.
Add this slowly to the wet mixture.
Mix until just combined, don't overmix dough.
Roll dough into small balls, about one inch.
Place them on your prepared cookie sheet.
Leave two inches of space between each.
Press each ball gently with a fork.
Make a crisscross pattern on each cookie.
Put the sheet in your preheated oven.
Bake for 10 to 12 minutes exactly.
Cookies should look slightly golden on edges.
Don't overbake them or they'll be hard.
Remove from oven and let cool completely.
