- 2 cups basmati rice
- 1 lb lamb or beef cubed
- 2 large carrots julienned
- 1/2 cup raisins
- 1 large onion sliced
- 4 cups beef broth
- 1 tsp cumin powder
- 1 tsp cardamom powder
- 1/2 tsp cinnamon powder
- Salt to taste
- 3 tbsp vegetable oil
Soak basmati rice for 30 minutes.
Heat oil in heavy pot.
Brown meat pieces on all sides.
Add sliced onions and cook golden.
Add all spices and mix well.
Pour broth and bring to boil.
Reduce heat and simmer 45 minutes.
Add carrots and cook 10 minutes.
Drain rice and layer over meat.
Add raisins on top layer.
Cover and cook 25 minutes low.
Let rest 10 minutes before serving.
