Ingredients
  

  • 1 cup unsalted butter (softened)
  • 1/2 cup  powdered sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup pecans or walnuts (finely chopped)
  • Additional powdered sugar for coating

Instructions
 

  • Preheat the oven to 350°F (175°C). Prepare a baking sheet.
  • Cream butter and sugar until fluffy. Use a mixer.
  • Mix in vanilla extract.
  • Gradually add flour, and mix into smooth dough.
  • Add nuts evenly into the dough.
  • Form small dough balls on the sheet.
  • Bake for 12-15 min until edges are golden.
  • Cool on a sheet, then coat with sugar.
  • Place on rack for complete cooling.
  • Add more sugar if desired. Serve or store.

Notes

  • Don't bake them too long: These cookies are delicate, so avoid baking them for too long. They're perfect when they just start to turn golden.
  • Use powdered sugar: Roll them in powdered sugar while they're still warm for a classic look and sweet taste.
  • Chill the dough: If the dough is too sticky, put it in the fridge for a while to make it easier to roll.
