- 2 tablespoons Olive oil
- 1 Medium onion (chopped)
- 2 cloves Garlic (minced)
- 1 can Tomatoes (crushed) (28 ounces)
- 1 can Tomatoes (diced) (14 ounces)
- 1 cup Vegetable broth
- 1 teaspoon Basil (dried)
- 1 teaspoon Oregano (dried)
- 1/2 teaspoon Thyme (dried)
- 1/2 teaspoon Salt (or to taste)
- 1/4 teaspoon Black pepper (or to taste)
- 1 cup Heavy cream
- 1-2 teaspoons Harissa paste
- Fresh basil leaves (for garnish)
- Grated Parmesan cheese (for garnish)
In a large pot, warm olive oil over medium heat. Sauté onion and garlic until soft, about 5 minutes.
Add crushed tomatoes, diced tomatoes, vegetable broth, herbs, salt, and pepper. Bring to a boil, then simmer for 15-20 minutes.
Carefully blend the soup until smooth. Add cream and harissa for heat. Warm but don't boil.
Serve hot with basil and Parmesan, if desired.
