Ingredients
  

  • 2 tablespoons  Olive oil
  • Medium onion (chopped)
  • 2 cloves  Garlic (minced)
  • 1 can Tomatoes (crushed) (28 ounces) 
  • 1 can Tomatoes (diced) (14 ounces)
  • 1 cup  Vegetable broth
  • 1 teaspoon Basil (dried)
  • 1 teaspoon  Oregano (dried)
  • 1/2 teaspoon  Thyme (dried)
  • 1/2 teaspoon  Salt (or to taste)
  • 1/4 teaspoon  Black pepper (or to taste)
  • 1 cup  Heavy cream
  • 1-2 teaspoons  Harissa paste
  • Fresh basil leaves (for garnish)
  • Grated Parmesan cheese (for garnish)

Instructions
 

  • In a large pot, warm olive oil over medium heat. Sauté onion and garlic until soft, about 5 minutes.
  • Add crushed tomatoes, diced tomatoes, vegetable broth, herbs, salt, and pepper. Bring to a boil, then simmer for 15-20 minutes.
  • Carefully blend the soup until smooth. Add cream and harissa for heat. Warm but don't boil.
  • Serve hot with basil and Parmesan, if desired.

Notes

  • Start with fresh, ripe tomatoes for the best flavour.
  • Add a little sugar to balance the tomato's tanginess.
  • Cook the soup slowly to let the flavours blend together.
