Ingredients
  

  • 1 lb kielbasa sausage sliced thin
  • 4 medium potatoes cubed small
  • 1 medium onion diced fine
  • 2 garlic cloves minced fresh
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream or milk
  • 2 tbsp olive oil for cooking
  • Salt and pepper to taste
  • 1 tsp paprika for color
  • Fresh parsley for garnish optional

Instructions
 

  • Heat oil in large soup pot.
  • Add sliced kielbasa to hot oil.
  • Cook kielbasa until browned on sides.
  • Remove kielbasa and set aside temporarily.
  • Add diced onions to same pot.
  • Cook onions until soft and translucent.
  • Add minced garlic and cook briefly.
  • Pour chicken broth into the pot.
  • Add cubed potatoes to the broth.
  • Bring mixture to a rolling boil.
  • Reduce heat and simmer fifteen minutes.
  • Return browned kielbasa to pot.
  • Add cream and paprika slowly.
  • Season with salt and pepper.
  • Simmer five more minutes gently.
  • Garnish with fresh parsley before serving.

  1. Brown kielbasa first for deeper, richer flavor
  2. Cut potatoes uniformly for even cooking results
  3. Don't boil after adding cream to prevent curdling
