Heat vegetable oil to 180°C (350°F) in a deep frying pan or fryer.
Cut fish into bite-sized pieces, and season with salt and pepper.
Dip fish in batter, ensuring full coating.
Carefully place fish in hot oil, to avoid overcrowding. Fry for 4-5 minutes until golden and crispy, in batches if necessary.
Remove cooked kinkling with a slotted spoon, and drain on a paper towel.
Serve hot with lemon wedges, often with chips and mushy peas.
