Ingredients

  • 500 g Plain flour
  • 1 teaspoon  Salt
  • 1 teaspoon  Baking powder
  • 200 ml Water
  • Vegetable oil (for frying)
  • 500 g Fresh fish filets (such as cod or haddock)
  • Salt and pepper (to season)
  • Lemon wedges (for serving)

Instructions

  • In a large bowl, combine flour, salt, and baking powder. Mix well.
  • Gradually add water, stirring until a smooth, thick batter forms, similar to pancake batter.
  • Heat vegetable oil to 180°C (350°F) in a deep frying pan or fryer.
  • Cut fish into bite-sized pieces, and season with salt and pepper.
  • Dip fish in batter, ensuring full coating.
  • Carefully place fish in hot oil, to avoid overcrowding. Fry for 4-5 minutes until golden and crispy, in batches if necessary.
  • Remove cooked kinkling with a slotted spoon, and drain on a paper towel.
  • Serve hot with lemon wedges, often with chips and mushy peas.

Notes

  • Choose all-purpose flour for a soft texture.
  • Use fresh yeast and dissolve it in warm water for a good rise.
  • Add enough sugar for sweetness.
  • Try adding a little cinnamon or raisins for a different flavour.
