- 4 Russet Potatoes
- 1/2 lb Shrimp
- 1/2 lb Lump Crab Meat
- 1 cup Heavy Cream
- 4 tbsp Unsalted Butter
- 3 cloves Garlic
- 1 tsp Old Bay Seasoning
- 1 cup Cheddar Cheese
- 2 tbsp Olive Oil
- 1/4 cup Green Onions
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Prep the Potatoes. Scrub the potatoes very clean. Poke them with a fork several times. Rub them with oil and salt.
Bake the Potatoes. Put them in a hot oven. Bake at 400 degrees for one hour. The skin should be very crispy.
Cook the Seafood. Melt butter in your large skillet. Add the garlic and the shrimp. Cook until the shrimp turn pink.
Make the Sauce. Pour the heavy cream into the skillet. Add the Old Bay seasoning. Let it simmer until it gets thick.
Add the Crab. Fold in the lump crab meat gently. Do not break the lumps too much. Heat it through for two minutes.
Stuff the Potato. Cut a slit in the baked potatoes. Fluff the inside with a fork. Pour the seafood sauce inside.
Add Toppings. Sprinkle lots of cheese on top. Finish with fresh green onions. Serve while it is very hot.
