- 1⁄2 Eggs (separated)
- 1 cup Caster sugar (100 g)
- 2 cup Milk (250 ml)
- 3⁄4 cups Heavy cream (500 ml)
- 125 g Cup macadamia nuts (finely chopped)
Mix egg yolks and sugar until fluffy. Combine milk and cream. Heat until bubbles form. Add hot milk to yolks. Whisk well. Pour into the saucepan. Cook until thick, 5-8 mins. Don't let it boil. Cool in ice water. Stir often.
Whisk the remaining cream until soft peaks form. Mix into a cooled mixture. Add nuts. Pour into the ice cream maker. Freeze following instructions.
Serve now or freeze for later. Enjoy the creamy treat!
