- 1 Lb Elbow Macaroni
- 8 Tbsp Unsalted Butter
- 1/2 Cup All-purpose Flour
- 5 1/2 Cups Whole Milk
- 4 Cups Sharp Cheddar Cheese
- 2 Cups Gruyere Cheese
- 1/4 Tsp Nutmeg
- 1/4 Tsp Cayenne Pepper
- 2 Cups White Bread Crumbs
- 1 Tsp Salt
Preheat your oven to 375 degrees. Butter your large baking dish well. Set it aside for later use.
Boil a large pot of salted water. Add your elbow macaroni pasta now. Cook it for two minutes less than directed. Drain the pasta in a colander.
Melt the butter in a large saucepan. Add the flour to the melted butter. Whisk them together for one minute. This makes a thick paste.
Slowly pour in the warm milk. Keep whisking to avoid any lumps. Simmer the liquid until it gets thick. It should coat the back of a spoon.
Remove the pan from the heat. Stir in most of the grated cheese. Add the salt, pepper, and spices. Stir until the cheese is fully melted.
Add the cooked macaroni to the sauce. Mix it until every noodle is covered. Pour the mixture into the baking dish.
Top the pasta with the remaining cheese. Add your fresh breadcrumbs on top. Bake for thirty minutes until golden brown.
