- 2 tablespoons Canola oil
- 2 Medium carrots (peeled)
- 1 stalk Celery (cleaned and trimmed)
- 1/2 Medium onion (peeled)
- 1 teaspoon Garlic (minced)
- 2 Tomato paste (6 oz. cans)
- 1 Tomato puree (15 1/2 oz. can)
- 5 cups Water
- 1 teaspoon Paprika
- 3 tablespoons Sugar
- 2 teaspoons Salt
- ¼ teaspoon Fresh ground pepper
- 1 pinch Italian seasoning
- ½ Lemon (for juice)
Chop carrots, celery, and onion finely, about ½ inch pieces.
Heat canola oil in a big pot. Add minced veggies. Cook until soft, not browned, 5-7 minutes.
Add minced garlic. Cook for 2 minutes.
Mix in tomato paste. Cook for 2 more minutes.
Pour in tomato puree, water, paprika, sugar, salt, pepper, Italian Seasoning, and lemon juice.
Bring to a boil, and stir often. Reduce heat, and simmer for 20 minutes, stirring frequently.
Take it off the heat, and taste, and adjust the seasoning if needed. Serve right away.
