Set your oven to 350°F (175°C).
Line your baking sheet with foil.
Place a wire rack on top.
This helps bacon cook evenly.
It gets crispy on all sides.
Mix brown sugar in a bowl.
Add maple syrup to it.
Stir in black pepper.
Add cayenne if you like spice.
Mix until everything combines well.
The mixture should be slightly thick.
Lay bacon strips on the rack.
Don't let them overlap.
Brush the sugar mixture on each strip.
Coat both sides generously.
Use all the mixture.
The more coating, the better taste.
Put the baking sheet in the oven.
Bake for 20-25 minutes.
Watch it closely after 20 minutes.
The bacon should turn dark brown.
The sugar will caramelize and bubble.
Don't let it burn.
Remove from oven carefully.
Let it cool for 5 minutes.
The bacon will get crispier as it cools.
Serve warm and enjoy the deliciousness.
