- 3 Pound Moose meat
- 2 Pound Pork
- Grab 5ft 32-34 gauge casing
- 1 tablespoon Ground pepper
- 2 tablespoon Garlic powder
- 2 tablespoon Saint-Lawrence salt
- 2 tablespoon Maple sugar
- 1 teaspoon Celery seeds
- 2 grams kosher salt (clove, celery powder and rosemary)
- 1 cup Cold water
- 1 teaspoon Paprika
Cube moose and pork. Mix meats, spices, and water.
Blend until smooth. Cook a small portion for tasting.
Adjust seasoning if necessary. Refrigerate meat for 4 hours.
Rinse the casing in cold water. Attach a sausage accessory.
Fill the casing with meat. Make a knot at the end.
