Ingredients
  

  • 3 Pound Moose meat
  • 2 Pound Pork
  • Grab 5ft 32-34 gauge casing
  • 1 tablespoon Ground pepper
  • 2 tablespoon Garlic powder
  • 2 tablespoon Saint-Lawrence salt
  • 2 tablespoon Maple sugar
  • 1 teaspoon Celery seeds
  • 2 grams kosher salt (clove, celery powder and rosemary)
  • 1 cup  Cold water
  • 1 teaspoon Paprika

Instructions
 

  • Cube moose and pork. Mix meats, spices, and water.
  • Blend until smooth. Cook a small portion for tasting.
  • Adjust seasoning if necessary. Refrigerate meat for 4 hours.
  • Rinse the casing in cold water. Attach a sausage accessory.
  • Fill the casing with meat. Make a knot at the end.
  • Round sausages by rolling. Refrigerate overnight before freezing.
