- 1 tbsp Margarine or butter (melted)
- 2 1/2 cups lettuce (shredded)
- 2 tbsp Green bell pepper or Red (finely chopped)
- 2 Spicy Black Bean Veggie Burgers (Morningstar Farms®)
- 1/2 cup Salsa
- 1/2 cup Monterey Jack cheese or shredded Cheddar cheese
- 1/4 cup Pepper Jack cheese (shredded)
- 2 tsp Salt-free Southwest or Mexican seasoning
- 10 Flour tortillas (8-inch)
Thaw and crumble veggie burgers.
Mix with salsa, cheese, and seasoning.
Slice tortillas into triangles, and save scraps.
Fill triangles, fold, secure with toothpicks, brush with butter, and bake.
Place on lettuce, add pepper and serve
