Heat the oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them.
In a large bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
In another bowl, combine vegetable oil, eggs, and vanilla. Mix well.
Gradually add wet ingredients to the dry mix, and stir until combined.
Fold in carrots, pineapple, and nuts (if used).
Divide batter into prepared pans.
Bake for 25-30 mins, until a toothpick comes out clean.
Let cakes cool for 10 mins, then transfer to a wire rack.
