Ingredients
  

Preparing The Cake:

  • 2 cups All-purpose flour
  • 4 large Eggs
  • 1/2 cup Vegetable oil
  • 2 cups  Sugar (granulated)
  • 2 cups  Carrots (grated)
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Ground cloves
  • 1 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/2 cup  Pineapple crushed (drained)
  • 1/2 cup Pecans or walnuts (chopped)
  • 2 tsp vanilla extract
  • 1/2 tsp Salt

For The Frosting:

  • 1/2 cup Unsalted butter (softened)
  • 8 oz  Cream cheese (softened)
  • 1 tsp Vanilla extract
  • 4 cups Powdered sugar

Instructions
 

Preparing the Cake:

  • Heat the oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them.
  • In a large bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  • In another bowl, combine vegetable oil, eggs, and vanilla. Mix well.
  • Gradually add wet ingredients to the dry mix, and stir until combined.
  • Fold in carrots, pineapple, and nuts (if used).
  • Divide batter into prepared pans.
  • Bake for 25-30 mins, until a toothpick comes out clean.
  • Let cakes cool for 10 mins, then transfer to a wire rack.

For The Frosting:

  • Beat softened cream cheese and butter until smooth.
  • Gradually add vanilla and powdered sugar, and beat until creamy.
  • Frost the cake once it has cooled.
  • Place the second cake on top and frost the entire cake.
  • Decorate with nuts or carrots.
  • Slice, serve, and enjoy your homemade carrot cake!
