- 2 cups parboiled long-grain rice
- 1 cup mixed vegetables carrots, peas, corn
- ½ cup chopped liver or shrimp optional
- 1 cup chopped bell peppers red, green, yellow
- 1 small onion chopped
- 1 teaspoon curry powder
- ½ teaspoon thyme
- 1 seasoning cube
- Salt to taste
- 2 tablespoons oil
- 1 tablespoon soy sauce optional
- 1 teaspoon garlic minced
- ½ teaspoon pepper
- 2 cups chicken stock or seasoned water
Cook rice halfway, drain, and keep it aside.
Add onions and garlic. Stir for one minute.
Cook it until brown. Remove and set aside.
Stir them in for two to three minutes.
Put curry, thyme, salt, and pepper.
Stir well so it mixes with everything.
Add just enough to steam the rice.
Cook until all water dries up.
Mix shrimp or liver with the rice.
Stir and cook for five minutes. Done!

Use parboiled rice so it doesn’t get sticky.
