Ingredients
  

  • 4 large eggs
  • 1/3 cup sugar
  • 2 cups milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions
 

Whisk the eggs and sugar

  • In a medium bowl, whisk eggs and sugar until smooth. The mix should look pale and creamy.

Warm the milk

  • In a saucepan, heat the milk over low heat. Do not boil. Warm until small bubbles appear at the edges.

Mix the egg blend

  • Slowly add warm milk into the egg mixture while whisking. This keeps the eggs from cooking too fast.

Cook the mixture

  • Pour the mix back into the saucepan. Cook on low heat and stir gently. Heat until it thickens slightly and coats the spoon.

Add flavor and chill

  • Remove from heat. Stir in cream, vanilla, nutmeg, cinnamon, and salt. Strain the mixture to remove any lumps. Let it cool, then chill in the fridge for at least 2 hours.

Serve and enjoy
