Equipment

  • Baking Dish
  • Large mixing bowl
  • Small saucepan
  • Whisk
  • Measuring cups

Ingredients

  • 2 Cups Broccoli Florets
  • 1 Cup Cheddar Cheese
  • 1 Can Cream Of Mushroom Soup
  • 1/2 Cup Mayonnaise
  • 2 Large Eggs
  • 1/4 Cup Butter
  • 1 Sleeve Ritz Crackers

Instructions

  • Preheat your oven to 350 degrees Fahrenheit first. Grease your baking dish with oil or butter. This stops the cheese from sticking to the sides.
  • Steam your broccoli in a pot until it is tender. Drain all the water out very carefully. Chop the broccoli into small, bite-sized pieces now.
  • Whisk the eggs in your large mixing bowl. Add the soup, mayonnaise, and melted butter. Stir them until the mixture looks very smooth.
  • Fold the chopped broccoli and cheese into the bowl. Mix everything gently so the broccoli stays whole. Pour the mixture into your prepared baking dish.
  • Crush the crackers into a fine, sandy texture. Sprinkle them evenly over the top of the mix. Add a little extra melted butter on the crackers.
  • Place the dish in the center of the oven. Bake it for about 45 minutes until golden. The center should be firm and not jiggly.

Notes

  • Use fresh broccoli for a much firmer bite.
  • Do not overcook the broccoli before baking it.
  • Grate your own cheese for a smoother melt.
  • Crush the crackers just before you use them.
  • Let the casserole rest for five minutes after baking.
  • Add a pinch of black pepper for extra zest.
  • Check the top often so it does not burn.
