  • 2 cups Light Brown Sugar

  • Pop the Corn: Use an air popper to pop your fresh kernels. Place the fluffy popcorn into a very large roasting pan. Remove any unpopped kernels so you do not hurt teeth.
  • Mix the Sauce: Put butter, sugar, and syrup in a large saucepan. Heat the mixture over medium heat until it starts boiling. Stir it constantly so the sugar does not burn.
  • Boil the Caramel: Let the mixture boil for exactly five minutes. Do not stir the sauce while it is boiling hard. This creates the perfect texture for your caramel coating.
  • Add Final Ingredients: Remove the hot saucepan from the heat source. Quickly stir in the baking soda and the vanilla extract. The sauce will foam up and look very light.
  • Coat the Popcorn: Pour the hot caramel over the popped corn immediately. Stir gently to coat every piece of popcorn very well. Use a large spoon to reach the bottom layers.
  • Bake the Mix: Put the pan in a low-heat oven. Bake it for about forty-five to sixty minutes total. Stir the popcorn every fifteen minutes to keep it loose.
  • Cool and Serve: Spread the popcorn onto wax paper or baking sheets. Let it cool completely until the caramel is very hard. Break the large clumps into small bite-sized pieces.
