Equipment

  • Large Dutch Oven
  • Tongs
  • Large bowl
  • Measuring cups
  • Sharp knife
  • Cutting board
  • Wooden spoon

Ingredients

  • 3 lbs WHOLE CHICKEN
  • 1 lb SMOKED SAUSAGE
  • 3 cups WHITE RICE
  • 1 large ONION
  • 2 stalks CELERY
  • 2 tbsp CHICKEN BOUILLON
  • 1 tsp BLACK PEPPER
  • 1 tsp SALT

Instructions

Boil the Chicken

  • Place the whole chicken in your large Dutch oven. Add the chopped onion, celery, and the bouillon. Cover the meat with water and bring to boil.

Simmer until Tender

  • Turn the heat down to a low simmer. Let the chicken cook for about one hour. The meat should fall right off the bone.

Remove and Cool

  • Lift the chicken out with your sturdy tongs. Place it in a bowl to cool down. Do not throw away the cooking liquid yet.

Strain the Broth

  • Pour the broth through a mesh strainer if needed. You want a clear and flavorful liquid for rice. Measure out six cups of this hot broth.

Prep the Meat

  • Remove the skin and bones from the cooled chicken. Shred the meat into bite-sized pieces with your hands. Slice your smoked sausage into thin round coins.

Combine in Pot

  • Put the six cups of broth back in pot. Add the shredded chicken and the sliced sausage pieces. Bring the liquid back to a gentle boil.

Add the Rice

  • Stir in the white rice and the black pepper. Turn the heat to low and cover the pot. Let it cook for about twenty minutes.

Let it Rest

  • Turn off the heat when the rice is soft. Let the pot sit covered for ten minutes. This helps the flavors meld together perfectly.

Notes

➔ Use a whole chicken for the best broth flavor.
➔ Do not overcook the rice or it gets mushy.
➔ Add extra pepper for a true South Carolina bite.
➔ Keep the lid on tight while the rice steams.
➔ Brown the sausage first for extra smoky depth.
➔ Use long-grain rice so the grains stay separate.
➔ Taste the broth before adding rice to adjust salt.
