Ingredients

  • 2 cups of all-purpose flour.
  • 2 cups of granulated sugar.
  • 1/2 cup of unsweetened cocoa powder.
  • 2 teaspoons of baking soda.
  • 1 teaspoon of baking powder.
  • 1/2 teaspoon of salt.
  • 1 cup of vegetable oil.
  • 1 cup of sour cream.
  • 2 large eggs.
  • 1 teaspoon of vanilla extract.
  • 1 cup of hot water.

Instructions

Prep the Oven

  • Heat your oven to 350°F before you start. Grease your cake pans with butter.

Mix Dry Parts

  • Put flour, sugar, and cocoa in the bowl. Add the baking soda and powder.

Stir the Dry

  • Use a whisk to mix these parts well. Make sure there are no lumps.

Add Wet Parts

  • Pour in the oil, sour cream, and eggs. Add the vanilla extract now.

Mix the Batter

  • Use your mixer on a medium speed. Beat the batter for two minutes.

Add Hot Water

  • Pour the hot water in very slowly. Stir the batter until it is smooth.

Fill the Pans

  • Divide the batter between the two pans. They should be even in size.

Bake the Cake

  • Bake for 30 to 35 minutes total. A toothpick should come out clean.

Notes

  • Use room temp eggs. They mix into the batter much better.
  • Add sour cream. This makes the cake stay very moist.
  • Don't skip hot water. It helps the cocoa flavor bloom.
  • Grease pans well. Use flour and butter to prevent sticking.
  • Cool before frosting. A warm cake will melt the icing.
  • Use dark cocoa. It gives the cake a very deep color.
