Ingredients

  • 1 pre-baked 9-inch pie crust.
  • 1 1/2 cups of granulated sugar.
  • 1/4 cup of cornstarch.
  • 1/4 teaspoon of salt.
  • 3 cups of whole milk.
  • 4 large egg yolks beaten.
  • 1 1/2 cups of semi-sweet chocolate chips.
  • 2 tablespoons of unsalted butter.
  • 1 teaspoon of vanilla extract.
  • Whipped cream for the topping.

Instructions

Mix Dry Parts

  • Put sugar, cornstarch, and salt in the saucepan. Whisk them together well.

Add the Milk

  • Pour the milk into the pan slowly. Whisk until the sugar dissolves.

Cook the Base

  • Turn the stove to medium heat. Stir it until it starts to bubble.

Temper the Eggs

  • Add a little hot milk to the yolks. Then pour the eggs into the pan.

Thicken the Mix

  • Keep whisking for two more minutes. The mix will get very thick.

Add the Chocolate

  • Turn off the heat. Stir in the chips, butter, and vanilla.

Fill the Crust

  • Pour the hot pudding into your baked crust. Smooth the top with a spoon.

Chill the Pie

  • Put the pie in the fridge for four hours. Top with whipped cream before serving.

Notes

  • Whisk constantly. This prevents any lumps from forming in the pudding.
  • Temper your eggs. It stops the eggs from scrambling in the heat.
  • Use whole milk. This makes the filling very rich and creamy.
  • Cool the crust. Make sure the crust is cold before filling.
  • Use good chocolate. High-quality chips make a big flavor difference.
  • Cover with wrap. Put plastic on the surface to prevent skin.
