Equipment

  • Food processor
  • Mixing bowl
  • Rubber spatula
  • Measuring cups
  • Chef Knife

Ingredients

  • 12 oz FRESH CRANBERRIES
  • 2 large NAVEL ORANGES
  • 1 cup GRANULATED SUGAR
  • 0.5 cup CHOPPED PECANS

Instructions

Step 1:

  • Gather all your fresh fruit first. Wash the berries in a colander. Make sure they are clean and dry. Discard any berries that look dark. These might taste bitter in the relish.

Step 2:

  • Get your oranges ready for the bowl. Slice them into eight small wedges. Keep the bright orange skin on them. The skin has all the citrus oils. This provides a very strong orange scent.

Step 3:

  • Place the berries in the processor. Add the orange pieces on top. Pulse the machine a few times only. Watch the fruit turn into small pieces. Stop before it turns into a juice.

Step 4:

  • Transfer the fruit to your mixing bowl. Sprinkle the white sugar over the top. Use a large spoon to stir well. The sugar will start to melt slowly. This creates a light and sweet syrup.

Step 5:

  • Measure out your chopped pecan pieces. Stir them into the fruit mixture. Make sure they are spread out evenly. The nuts add a great earthy flavor. They make every bite very interesting.

Step 6:

  • Cover the bowl with some plastic wrap. Set it in the back of the fridge. Let it sit for several long hours. The flavors need time to become one. Serve it cold for the best results.

Notes

Use very fresh cranberries for the best tart flavor.
Adjust the sugar if you like it more sweet.
Chill the relish overnight for a better deep taste.
Do not over-process the fruit into a thin mush.
Toast your pecans for a much richer nutty flavor.
Wash the oranges well before you chop them up.
Remove all seeds from the oranges before pulsing them.
Use a pulse setting to keep the texture chunky.
This recipe is naturally gluten-free and very healthy.
