Ingredients

  • 1 cup of regular stone-ground grits not instant.
  • 4 cups of water or chicken broth for more flavor.
  • 1/2 teaspoon of salt.
  • 1/2 cup 1 stick of unsalted butter.
  • 2 cups of sharp cheddar cheese shredded.
  • 2 large eggs lightly beaten.
  • 1/2 cup of whole milk.
  • 2 cloves of garlic minced (or 1 teaspoon of garlic powder).
  • 1/4 teaspoon of cayenne pepper optional for heat.

Instructions

Boil the Liquid

  • Bring the water or broth and salt to a boil in your large saucepan over medium-high heat.

Add the Grits

  • Slowly whisk in the grits. Reduce the heat to low and cover the pot tightly.

Simmer to Soften

  • Cook the grits for 20 to 25 minutes, stirring often, until they are thick and the water is absorbed.

Stir in Butter and Garlic

  • Remove the pot from the heat. Stir in the butter and garlic until the butter is completely melted.

Add the Cheese

  • Add the shredded cheddar cheese to the warm grits. Stir until the cheese is gooey and smooth.

Mix the Eggs and Milk

  • In a small bowl, whisk together the eggs and milk. Slowly stir this mixture into the grits.

Season the Mix

  • Add the cayenne pepper and extra black pepper if you like a little kick.

Bake (Optional)

  • For a firmer texture, pour the mix into a greased baking dish and bake at 350°F for 30 minutes until golden.

Notes

  • Whisk constantly. Stirring frequently prevents the grits from clumping and ensures a silky, lump-free texture.
  • Use chicken broth. Using broth instead of plain water adds a deep, savory layer of flavor to the corn.
  • Don't use instant grits. Real stone-ground or regular grits provide a much better bite and authentic Southern feel.
  • Fresh garlic is best. Sautéing fresh minced garlic in the butter before adding it to the grits gives a bold, sweet aroma.
  • Temper the eggs. Add a spoonful of warm grits to your egg mix before pouring it all in to prevent the eggs from scrambling.
  • Add a topping. A sprinkle of fresh chives or crispy bacon bits on top adds a great crunch and color.
