Ingredients
  

  • 1 cup Vegetable Oil
  • 1 cup All-purpose Flour
  • 1.5 cups Onion chopped
  • 1 cup Green Bell Pepper chopped
  • 1 cup Celery chopped
  • 4 cloves Garlic minced
  • 6 cups Chicken Broth
  • 1 lb Andouille Sausage sliced
  • 1 lb Shrimp peeled and deveined
  • 1 lb Crab Meat
  • 2 tbsp Cajun Seasoning
  • 2 Bay Leaves
  • 2 cups Brussel Sprouts chopped for a healthy twist
  • 1 cup Okra sliced
  • 1 tsp Salt

Instructions
 

1. Make the Roux:

  • Heat the oil in your Dutch oven. Whisk in the flour slowly. Stir it constantly on medium heat. Wait until it turns dark brown. This takes about twenty minutes.

2. Sauté the Vegetables:

  • Add your onions and celery now. Toss in the bell peppers too. Cook them until they are soft. This builds the flavor base.

3. Add the Liquids:

  • Pour in the chicken broth slowly. Stir well to avoid any lumps. Bring the mixture to a boil. Then turn the heat down low.

4. Season the Pot:

  • Stir in the Cajun spices. Add the garlic and bay leaves. Let it simmer for thirty minutes. This lets the flavors meld.

5. Add the Meats:

  • Slice the sausage into small rounds. Put them into the pot. Let them cook for ten minutes. The smoky oil will bleed out.

6. Fold in Seafood:

  • Add the shrimp and crab meat. Put the okra in now too. Cook for only five minutes. The shrimp should turn bright pink.

7. Final Check:

  • Taste the broth one last time. Add salt if you need it. Remove the bay leaves before eating. Serve it over hot white rice.
