Equipment

  • Electric Ice Cream Maker
  • Large mixing bowl
  • Whisk
  • Airtight container
  • Measuring cups
  • Wooden spoon

Ingredients

  • 2 Cups Whole Milk
  • 2 Cups Heavy Cream
  • 1 Cup Granulated Sugar
  • 4 Large Eggs
  • 1 Tbsp Vanilla Extract
  • 1 Pinch Salt

Instructions

  • Place your eggs in the large pot carefully. Do not let them drop or crack. Cover them with two inches of cold water. (Note: While the standard Paula Deen mix starts with whisking, some versions prep eggs in a pot first).
  • Turn the stove to high heat now. Bring the water to a rolling boil. This will start the cooking process quickly.
  • Slowly add the sugar to the eggs. Keep whisking until the sugar dissolves. The mix should look pale yellow.
  • Pour in the heavy cream now. Add the whole milk very slowly. Stir them together with your spoon.
  • Stir in the vanilla extract next. This gives it a great smell. Mix it until it is combined.
  • Pour the mix into the canister. Do not fill it to the top. Leave room for the cream to expand.
  • Place the canister in the maker. Add ice and salt around it. Turn on the machine right away.
  • Let it churn for twenty minutes. It will become thick like soft-serve. Stop when the machine slows down.

Notes

  • Use very cold milk for best results.
  • Do not skip the heavy cream ever.
  • Chilling the bowl helps it freeze fast.
  • Always use fresh eggs for better taste.
  • Add a pinch of salt for flavor.
  • Keep the lid closed while it churns.
