Ingredients
  

  • 2 cups of all-purpose white flour.
  • 1/2 cup of confectioners' powdered sugar.
  • 1 cup of softened unsalted butter.
  • 4 large eggs at room temperature.
  • 2 cups of granulated white sugar.
  • 1/4 cup of all-purpose flour for filling.
  • 1/2 cup of fresh lemon juice.
  • 1 tablespoon of grated lemon zest.

Instructions
 

Heat the Oven

  • Preheat your oven to 350 degrees Fahrenheit first. Lightly grease your 9 by 13 inch pan.

Make the Crust

  • Mix 2 cups flour and powdered sugar together. Cut in the soft butter with a fork.

Bake the Base

  • Press the dough into the bottom of the pan. Bake for 20 minutes until it is golden.

Mix the Filling

  • Whisk the eggs and the granulated sugar well. Add 1/4 cup flour and the lemon juice.

Add the Zest

  • Stir in the fresh lemon zest for more flavor. Pour this mixture over the hot baked crust.

Final Baking Time

  • Put the pan back into the hot oven. Bake for another 25 minutes until it sets.

Cool and Dust

  • Let the bars cool completely on the counter. Sift extra powdered sugar over the top before cutting.
