Ingredients
  

  • 1 box LEMON CAKE MIX
  • 0.5 cups MELTED BUTTER
  • 3 large EGGS
  • 8 oz CREAM CHEESE
  • 16 oz POWDERED SUGAR
  • 2 tbsp LEMON JUICE
  • 1 tbsp LEMON ZEST
  • 1 tsp VANILLA EXTRACT

Instructions
 

Step 1:

  • Turn your oven to 350 degrees right now. Grease your baking pan with butter or spray. This prevents the gooey cake from sticking later. Set the pan aside for a few minutes.

Step 2:

  • Put the lemon cake mix in a bowl. Add one egg and the melted butter now. Stir them until a soft dough forms. This will be the base of your cake.

Step 3:

  • Press the dough into the greased baking pan. Use your hands to make it very flat. Spread it all the way to the corners. This layer will be the firm bottom.

Step 4:

  • Take another bowl for the creamy top layer. Add the softened cream cheese to this bowl. Beat it with the mixer until very smooth. There should be no lumps in the cheese.

Step 5:

  • Add the remaining two eggs to the cheese. Pour in the fresh lemon juice and zest. Add the vanilla extract for a sweet smell. Mix these ingredients on a low speed.

Step 6:

  • Slowly add the powdered sugar to the bowl. Keep the mixer on a low setting now. This prevents the sugar from flying everywhere. Mix until the filling is thick and creamy.

Step 7:

  • Pour the cheese mixture over the cake base. Use a spatula to spread it very evenly. Make sure it covers the entire bottom layer. It should look smooth and white.

Step 8:

  • Place the pan in the center of the oven. Bake it for about forty minutes total. The edges should be a light golden brown. The center should still jiggle a little bit.

Step 9:

  • Remove the pan from the oven very carefully. Place it on the wire rack to cool. The cake will firm up as it cools. Do not cut it while it is hot.

Step 10:

  • Wait for the cake to reach room temperature. Dust the top with more powdered sugar. Slice it into small squares for your guests. Enjoy the gooey lemon goodness now!
