- 1 1/2 pounds of ground beef 80/20 blend is best.
- 1 medium onion finely chopped.
- 1/2 bell pepper finely chopped.
- 1 clove of garlic minced.
- 1 cup of crushed Ritz crackers or breadcrumbs.
- 2 large eggs lightly beaten.
- 1/3 cup of ketchup.
- 1 tablespoon of Worcestershire sauce.
- 1/2 teaspoon of salt.
- 1/4 teaspoon of black pepper.
- For the Glaze: 1/2 cup of ketchup 2 tablespoons of brown sugar, and 1 tablespoon of yellow mustard.
Mix the Base
In the large bowl, combine the ground beef, crushed crackers, eggs, and sautéed vegetables.
- Don't overmix. Stirring the meat too much can make the loaf tough; mix just until the ingredients are blended.
- Use Ritz crackers. Crushed buttery crackers add a much richer flavor and softer texture than plain breadcrumbs.
- Sauté your vegetables. Cooking the onions and peppers first ensures they are tender and sweet inside the loaf.
- Let it rest. Slicing the meatloaf immediately will cause it to fall apart; waiting ten minutes ensures perfect slices.
- Check the temp. The meatloaf is perfectly cooked when the internal temperature reaches 160°F.
- Use a baking sheet. If you like more "crust" on your meatloaf, shape it by hand on a sheet instead of using a pan.
