Equipment

  • Large mixing bowl
  • 9x13 inch baking pan
  • Electric hand mixer
  • Medium saucepan
  • Rubber spatula

Ingredients

  • 1 Cup All-purpose Flour
  • 2 Cups Granulated Sugar
  • 1/2 Cup Unsweetened Cocoa Powder
  • 1 Cup Melted Unsalted Butter
  • 4 Large Eggs
  • 2 Tsp Vanilla Extract
  • 1 Pinch Salt
  • 3 Cups Mini Marshmallows
  • 1/2 Cup Evaporated Milk
  • 1/2 Cup Softened Butter For Frosting
  • 1/3 Cup Unsweetened Cocoa Powder For Frosting
  • 1 Lb Confectioners Sugar
  • 1 Cup Chopped Pecans

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Grease your baking pan with butter or cooking spray. This prevents the cake from sticking to the bottom.
  • Mix your melted butter and sugar in a bowl. Add the eggs and vanilla extract to the mix. Whisk them until the mixture looks pale and smooth.
  • Sift the flour and cocoa powder into the bowl. Stir gently until you see no more white streaks. Do not overmix the batter or it gets tough.
  • Pour the thick batter into your prepared baking pan. Spread it out to the corners with a spatula. Bake it for about 30 to 35 minutes.
  • Remove the hot cake from the oven quickly. Pour the mini marshmallows over the entire warm surface. Return it to the oven for just two minutes.
  • Make the frosting in your saucepan while it bakes. Mix butter, cocoa, sugar, and evaporated milk together. Boil it for one minute then add the pecans.
  • Pour the warm chocolate frosting over the marshmallow layer. Spread it gently to cover all the white spots. Let the cake cool completely before you slice it.

Notes

  • Use room temperature eggs for a much smoother batter.
  • Measure your flour carefully using the spoon and level method.
  • Do not overbake the cake or it will become dry.
  • Apply the marshmallows while the cake is still very hot.
  • Let the frosting set for one hour before serving guests.
  • Toast the pecans for a deeper and richer nutty flavor.
  • Use high-quality cocoa powder for the very best chocolate taste.
