Ingredients
  

  • 1 Pint Fresh Oysters With Liquid
  • 1/4 Cup Unsalted Butter
  • 3 Cups Whole Milk
  • 1 Cup Heavy Cream
  • 1 Tsp Salt
  • 1/2 Tsp Black Pepper
  • 1 Pinch Cayenne Pepper
  • 2 Tbsp Fresh Parsley

Instructions
 

  • Drain the Oysters: Place a bowl under a strainer. Pour the oysters in to save the liquid.
  • Melt the Butter: Put the butter in your large pot. Turn the heat to medium and let it melt.
  • Simmer the Liquid: Add the milk, cream, and oyster juice. Heat it until you see small bubbles.
  • Season the Base: Stir in the salt, pepper, and cayenne. Make sure the spices mix well.
  • Cook the Oysters: Drop the oysters into the hot liquid. Cook them until the edges start to curl.
  • Garnish and Serve: Turn off the heat immediately. Sprinkle fresh parsley on top of the stew.

Notes

➔ Use fresh oysters for the very best ocean flavor.
➔ Do not let the milk come to a boil.
➔ Watch for the oyster edges to curl up slightly.
➔ Stir the pot often to prevent burning the milk.
➔ Add the salt at the very end of cooking.
➔ Use heavy cream for a much thicker soup base.
➔ Serve the stew in pre-heated bowls to stay warm.
