Ingredients
  

  • 2 cups SHARP CHEDDAR CHEESE
  • 1 cup MONTEREY JACK CHEESE
  • 1/2 cup MAYONNAISE
  • 4 oz PIMENTOS
  • 4 oz CREAM CHEESE
  • 1/2 tsp ONION POWDER
  • 1/4 tsp BLACK PEPPER
  • 1/8 tsp CAYENNE PEPPER

  • Prep the Cheese: Grate both types of cheddar into a bowl. Do not use the pre-bagged kind. Fresh cheese sticks together much better.
  • Soften the Base: Put your cream cheese in a small bowl. Microwave it for ten seconds to soften. This prevents lumps in your dip.
  • Mix the Creamy Parts: Add mayo to the softened cream cheese. Stir them until the mixture looks very smooth.
  • Add the Spices: Pour in the onion powder and peppers. Mix well so the spices spread evenly.
  • Fold in Pimentos: Pat your pimentos dry with a towel. Fold them gently into the creamy mixture.
  • Combine Everything: Pour the creamy mix over the shredded cheese. Stir until every shred is fully covered.
  • Chill and Serve: Put the bowl in the fridge for an hour. This lets the flavors wake up and blend.
