Ingredients
  

  • 14 ounces of canned salmon.
  • 1/2 cup of crushed saltine crackers.
  • 2 large eggs lightly beaten.
  • 1/4 cup of diced onion.
  • 1/4 cup of diced bell pepper.
  • 2 tablespoons of mayonnaise.
  • 1 teaspoon of yellow mustard.
  • 1/2 teaspoon of black pepper.
  • 1/4 cup of vegetable oil.

Instructions
 

  • Drain the liquid from the salmon can. Remove any skin or soft bones.
  • Put salmon in a large bowl. Flake it gently with a fork.
  • Add onions and peppers to the bowl. Mix them into the salmon.
  • Add eggs, crackers, mayo, and mustard. Stir until everything sticks together.
  • Shape the mix into small round cakes. This recipe makes about six cakes.
  • Add oil to your frying pan. Heat it over medium-high heat.
  • Place cakes in the hot oil. Fry for four minutes on each side.
  • Put cooked cakes on paper towels. This removes the extra oil.
