- 14 Oz Canned Salmon
- 1 Cup Breadcrumbs
- 2 Large Eggs
- 1/2 Cup Yellow Onion
- 1/4 Cup Fresh Parsley
- 1/4 Cup Vegetable Oil
- 1/2 Tsp Black Pepper
Open your cans of salmon and drain the liquid. Place the fish into your large mixing bowl. Flake the meat gently using a fork.
Add your chopped onions and breadcrumbs to the bowl. Crack your eggs and drop them inside too. Add your fresh parsley and black pepper now.
Mix all the ingredients well with your hands. Ensure the eggs coat every bit of the fish. This helps the patties stay firm and solid.
Shape the mixture into small round patties. Make them about one inch thick for even cooking. Place them on a clean plate for a moment.
Heat the vegetable oil in your skillet over medium. Wait for the oil to shimmer and get hot. This ensures the patties sear perfectly right away.
Place the patties into the hot oil carefully. Fry them for four minutes on each side. They should look deep golden and very crispy.
- Drain the salmon very well to avoid soggy patties.
- Chill the patties for ten minutes before you fry them.
- Do not crowd the skillet while cooking the fish.
- Use a fork to flake the salmon into small bits.
- Press the patties gently to help them brown evenly.
