Ingredients
  

  • 8 ounces fresh baby spinach.
  • 4 hard-boiled eggs sliced.
  • 8 slices cooked bacon crumbled.
  • 1/2 cup red onion thinly sliced.
  • 1/2 cup white sugar.
  • 1 teaspoon salt.
  • 1/2 cup cider vinegar.
  • 1 cup vegetable oil.
  • 1 tablespoon bottled chili sauce.

Instructions
 

  • Wash the spinach leaves very well. Pat them dry with a paper towel. Put them in a large bowl.
  • Add the sliced eggs to the bowl. Sprinkle the crumbled bacon on top. Add the red onion slices too.
  • Place sugar, salt, and vinegar in a pan. Add the oil and chili sauce. Whisk them over medium heat.
  • Bring the dressing to a light boil. Stir it until the sugar dissolves. Let it get slightly thick.
  • Pour the warm dressing over the spinach. Toss everything gently to coat. Serve it right away.

Notes

  • Use fresh, crisp spinach leaves.
  • Cook the bacon until it is very crunchy.
  • Do not overcook the dressing.
  • Add the dressing just before eating.
  • Try adding toasted pecans for extra crunch.
