Ingredients
  

  • 1 8-pound Standing Rib Roast
  • 1/2 Cup Softened Butter
  • 2 Tbsp Kosher Salt
  • 1 Tbsp Black Pepper
  • 3 Cloves Garlic
  • 2 Tbsp Fresh Rosemary

Instructions
 

  • Take the meat out of the fridge early. Let it sit for one hour. This brings the beef to room temperature.
  • Preheat your oven to 450 degrees Fahrenheit. A hot oven is key for a good sear.
  • Mix your butter, garlic, and herbs together. Smear the mixture all over the roast. Cover every inch of the meat.
  • Place the roast on the rack. Put it in the hot oven. Bake it for thirty minutes at high heat.
  • Lower the oven heat to 325 degrees. Continue cooking until the thermometer reads 135 degrees. This is for medium-rare.
  • Remove the pan from the oven carefully. Move the meat to a cutting board. Let it rest for twenty minutes.

  • Always let the meat rest before you slice it.

  • Do not trim away all of the white fat.
