Ingredients
  

  • 1 pre-baked 9-inch pie crust.
  • 4 large tomatoes sliced thin.
  • 1/2 cup chopped green onions.
  • 10 fresh basil leaves torn.
  • 1 cup sharp cheddar cheese.
  • 1 cup mozzarella cheese.
  • 1 cup real mayonnaise.
  • Salt and black pepper.

Instructions
 

  • Slice the tomatoes into thin rounds. Place them on paper towels. Sprinkle them with a little salt. Let them sit for 10 minutes.
  • Pat the tomatoes dry with more towels. This prevents a soggy pie crust. Do not skip this important step.
  • Place tomatoes in the baked pie crust. Add the chopped green onions. Sprinkle the torn basil leaves on top.
  • Mix both cheeses and mayonnaise together. Add a dash of black pepper. Stir until the mixture is smooth.
  • Spread the cheese mix over the tomatoes. Bake at 350°F for 30 minutes. The top should be light brown.
