Ingredients
  

  • 6 cups ZUCCHINI
  • 1 medium ONION
  • 1/2 cup BUTTER
  • 1 cup CHEDDAR CHEESE
  • 1/2 cup SOUR CREAM
  • 2 large EGGS
  • 1 sleeve RITZ CRACKERS
  • 1 tsp SALT
  • 1/2 tsp BLACK PEPPER

Instructions
 

Step 1:

  • Preheat your oven to 350 degrees now. Grease your baking dish with some butter. This prevents the cheese from sticking later.

Step 2:

  • Slice your zucchini into thin round circles. Chop your onion into very small pieces. Make sure the pieces are all even.

Step 3:

  • Melt butter in your large skillet today. Use medium heat so the butter melts. Do not let the butter turn brown.

Step 4:

  • Add the zucchini and onions to the pan. Sauté the vegetables until they are soft. This takes about five or six minutes.

Step 5:

  • Drain the extra liquid in your colander. This step is very important for texture. Too much water makes the dish soggy.

Step 6:

  • Beat your eggs in a large bowl. Use a whisk to make them fluffy. This helps the casserole rise a bit.

Step 7:

  • Mix in the sour cream and cheese. Stir them until the mixture is smooth. Add your salt and pepper for seasoning.

Step 8:

  • Add the cooked vegetables to the bowl. Stir everything together very gently now. Do not break the soft zucchini slices.

Step 9:

  • Pour the mixture into your baking dish. Spread it out so it is flat. Make sure the cheese is spread evenly.

Step 10:

  • Crush the crackers into small crumbs now. Sprinkle them over the top of the dish. Cover every inch with the buttery crumbs.

Step 11:

  • Bake the casserole for thirty-five minutes. Wait until the top is golden brown. Let it sit for five minutes before serving.
