- 4 cups Chicken Stock (store-bought or homemade)
- 1 tablespoon Soy Sauce
- 1/2 teaspoon Fresh Ginger (grated)
- 2 tablespoons Water
- 2 - 3 tablespoons Cornstarch
- 2 Eggs
- 2 - 3 Green Onions (chopped)
- Salt and freshly ground Black Pepper (to taste)
In a large pot, combine chicken stock and soy sauce. Add ginger.
Place the pot over medium-high heat and bring it to a boil.
In a small bowl, mix cornstarch and 2 tablespoons of water until dissolved. Slowly add this mixture to the stock to thicken it slightly. Reduce heat to a simmer.
Crack eggs into another bowl and beat until frothy.
Gently pour the beaten eggs into the simmering soup while stirring in one direction. The eggs will create ribbons.
Remove the soup from the heat and stir in the green onions.
Taste and season with salt and pepper as needed.
