Ingredients
  

  • 4 cups  Chicken Stock (store-bought or homemade)
  • 1 tablespoon  Soy Sauce
  • 1/2 teaspoon  Fresh Ginger (grated)
  • 2 tablespoons Water
  • 2 - 3 tablespoons  Cornstarch
  • Eggs
  • 2 - 3  Green Onions (chopped)
  • Salt and freshly ground Black Pepper (to taste)

Instructions
 

  • In a large pot, combine chicken stock and soy sauce. Add ginger.
  • Place the pot over medium-high heat and bring it to a boil.
  • In a small bowl, mix cornstarch and 2 tablespoons of water until dissolved. Slowly add this mixture to the stock to thicken it slightly. Reduce heat to a simmer.
  • Crack eggs into another bowl and beat until frothy.
  • Gently pour the beaten eggs into the simmering soup while stirring in one direction. The eggs will create ribbons.
  • Remove the soup from the heat and stir in the green onions.
  • Taste and season with salt and pepper as needed.
