Ingredients
  

  • 2 cups cooked jasmine rice cold
  • 1 cup pineapple chunks fresh or canned
  • 2 eggs beaten
  • 1/2 cup diced carrots
  • 1/2 cup green peas
  • 1/2 red bell pepper diced
  • 2 green onions chopped
  • 2 garlic cloves minced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce optional
  • 1 tsp curry powder
  • 1 tbsp oil vegetable or sesame
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

  • Use medium heat to warm it.
  • Cook until it smells nice.
  • Cook for 3–4 minutes, stirring.
  • Pour in the beaten eggs.
  • Mix with the veggies gently.
  • Stir everything together well.
  • Mix to coat all the rice.
  • Stir until evenly mixed through.
  • Turn off heat and mix gently.
  • Use cilantro and lime on top.
