Ingredients
  

  • 2 cups fresh pineapple cut small
  • 2 cups heavy cream
  • 1 cup milk
  • 3/4 cup sugar
  • 4 egg yolks
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 2 tbsp lime juice
  • 1/4 cup pineapple juice

Instructions
 

  • Cut pineapple into tiny pieces.
  • Blend half the pineapple until smooth.
  • Mix cream and milk together.
  • Beat egg yolks with sugar well.
  • Add vanilla and salt to eggs.
  • Pour cream into eggs very slowly.
  • Add blended pineapple and pineapple juice.
  • Put in lime juice for taste.
  • Strain everything through strainer once.
  • Put in fridge for two hours.
  • Pour into ice cream maker.
  • Follow machine directions to churn.
  • Add pineapple pieces at the end.
  • Put in freezer until hard.
