Ingredients

  • For the Cake Batter:
  • 1/2 cup softened butter.
  • 1 cup white granulated sugar.
  • 2 large eggs.
  • 1 teaspoon vanilla extract.
  • 1.5 cups all-purpose flour.
  • 2 teaspoons baking powder.
  • 1/2 cup whole milk.
  • For the Apple Filling:
  • 2 large Granny Smith apples.
  • 2 tablespoons white sugar.
  • 1 teaspoon ground cinnamon.
  • For the Brown Sugar Swirl:
  • 1/3 cup light brown sugar.
  • 1 teaspoon ground cinnamon.
  • For the Glaze:
  • 1 cup powdered sugar.
  • 2 tablespoons heavy cream.
  • 1/2 teaspoon vanilla extract.

Instructions

Prep the Oven and Pan

  • Set your oven to 350 degrees. Grease your baking pan with butter. This stops the cake from sticking.

Mix the Apple Filling

  • Peel and chop your apples small. Put them in a bowl. Add sugar and cinnamon. Toss them until they are coated.

Cream Butter and Sugar

  • Put butter and sugar in a bowl. Use your mixer until it is fluffy. This takes about three minutes.

Add Eggs and Vanilla

  • Add the eggs one at a time. Mix well after each egg. Stir in the vanilla extract now.

Add Dry Ingredients

  • Whisk flour and baking powder together. Add half to the butter mix. Pour in the milk next. Add the rest of the flour.

Layer the Batter

  • Pour half the batter into the pan. Spread it out with a spatula. It will be a thin layer.

Add Apple Layer

  • Spread half of the apples on top. Do not press them down hard. Just lay them gently.

Add Sugar Swirl

  • Mix brown sugar and cinnamon. Sprinkle half over the apples. It looks like dark sand.

Repeat the Layers

  • Add the remaining cake batter. Top with the rest of the apples. Finish with the sugar swirl.

Swirl with a Knife

  • Take a small butter knife. Gently swirl the layers together. Do not over-mix the batter.

Bake the Cake

  • Put the pan in the oven. Bake for about 40 minutes. Use a toothpick to check it.

Make the Glaze

  • Mix powdered sugar, cream, and vanilla. It should be smooth and runny. Use a whisk for this.

Drizzle and Serve

  • Pour glaze over the warm cake. Let it set for ten minutes. Cut into squares and enjoy.

Notes

  • Use Tart Apples: Granny Smith apples work best. They stay firm while baking.
  • Room Temperature Eggs: Cold eggs do not mix well. Take them out early.
  • Don't Over-mix: Stir the batter until just combined. Over-mixing makes the cake tough.
  • Small Apple Chunks: Cut apples into very small bits. This ensures apples in every bite.
  • Check Your Oven: Every oven is a bit different. Check the cake at 35 minutes.
  • Glaze While Warm: Pour glaze while the cake is hot. It soaks into the holes.
  • Fresh Cinnamon: Use fresh spices for best flavor. Old cinnamon loses its punch.
