Brown the Sausage
Put the sausage in a large skillet. Cook it over medium heat. Break it into small crumbles. Cook until it is no longer pink.
Make the Gravy Base
Do not drain the sausage fat. Sprinkle flour over the cooked meat. Stir it well for one minute. This helps cook out the raw flour taste.
Add the Milk
Slowly pour in the two cups of milk. Keep stirring as you pour. This prevents lumps from forming. Let it simmer until it gets thick.
Season the Gravy
Add salt and lots of black pepper. Add red pepper flakes for a kick. Turn off the heat. Set the skillet aside for a moment.
Prep the Biscuits
Open your can of biscuits. Cut each biscuit into small pieces. Usually, quarters work the best. Grease your baking dish well.
Layer the Pan
Place the biscuit pieces in the dish. Spread them out in an even layer. Pour the sausage gravy over the biscuits.
Whisk the Eggs
In a bowl, whisk eggs and milk. Add a little salt and pepper. Pour this egg mixture over the gravy.
Add the Cheese
Sprinkle the shredded cheese on top. Use as much as you like. Cheese makes everything taste much better.
Bake the Casserole
Heat your oven to 350 degrees. Bake for 30 to 40 minutes. The top should be golden brown. The eggs must be set and firm.
Let it Rest
Take the dish out of the oven. Let it sit for five minutes. This makes it easier to cut. Serve it warm to your guests.
