Ingredients

  • For the Cake Batter:
  • 2 cups of all-purpose flour.
  • 3/4 cup of white granulated sugar.
  • 2 teaspoons of fresh baking powder.
  • 1/2 teaspoon of fine table salt.
  • 1 large egg at room temperature.
  • 1/2 cup of whole milk.
  • 1/4 cup of softened unsalted butter.
  • 2 cups of fresh blue berries.
  • For the Crumb Topping:
  • 1/2 cup of white granulated sugar.
  • 1/3 cup of all-purpose flour.
  • 1/2 teaspoon of ground cinnamon.
  • 1/4 cup of cold cubed butter.

Instructions

Heat the Oven

  • Preheat your oven to 375°F. Grease your baking pan very well. This prevents the cake from sticking.

Mix Dry Ingredients

  • Put flour, sugar, and powder in a bowl. Add the salt and stir it well. Use a whisk to remove any lumps.

Add Wet Ingredients

  • Add the egg and the milk now. Put in the soft butter as well. Beat the mixture until it looks smooth.

Fold in Berries

  • Gently add the blueberries to the batter. Do not stir too hard or fast. You do not want purple batter.

Spread in Pan

  • Pour the batter into your prepared pan. Spread it out evenly with a spatula. It will look thick and rich.

Make the Topping

  • Mix sugar, flour, and cinnamon together. Cut in the cold butter with forks. It should look like small wet crumbs.

Add the Topping

  • Sprinkle the crumbs over the cake batter. Cover the entire top with the sugar. This creates the "buckle" look later.

Bake the Cake

  • Bake for about 40 to 45 minutes. The top should be golden and pretty. A toothpick should come out very clean.

Cool and Serve

  • Let the cake cool on a rack. Cut it into squares while still warm. Serve it with coffee or cold milk.

Notes

  • Use fresh berries for the best flavor.
  • Do not over-mix the thick cake batter.
  • Keep the topping butter very cold.
  • Toss berries in flour to prevent sinking.
  • Check the cake five minutes before done.
  • Use a glass pan for even browning.
  • Let it rest before you slice it.
  • Add lemon zest for a bright zing.
  • Store leftovers in an airtight plastic container.
