Ingredients

  • 4 cups of fresh blueberries washed and dried.
  • 1 cup of all-purpose flour.
  • 1 cup of granulated white sugar.
  • 1 tablespoon of baking powder.
  • 1/4 teaspoon of salt.
  • 1 cup of whole milk.
  • 1/2 cup of salted butter melted.
  • 1 teaspoon of vanilla extract.
  • 1 tablespoon of brown sugar for sprinkling.

Instructions

Heat the Oven

  • Preheat your oven to 350°F. Ensure your baking rack is in the middle.

Melt the Butter

  • Melt the butter in a small pan or microwave. Pour it into the bottom of the baking dish.

Mix the Batter

  • In a bowl, whisk flour, white sugar, and baking powder. Add the milk and vanilla to make a smooth batter.

Pour the Batter

  • Pour the batter directly over the melted butter. Do not stir the mixture together at all.

Add the Berries

  • Scatter the fresh blueberries over the top of the batter. The batter will rise up around the fruit later.

Sprinkle and Bake

  • Sprinkle a little brown sugar over the very top. Bake for 40 to 45 minutes until golden brown.

Cool and Serve

  • Let the cobbler sit for at least 10 minutes. This helps the fruit juices thicken up nicely.

Notes

  • Do not stir: This is the most important rule. Layer the items and let the oven do the work.
  • Use fresh berries: Fresh blueberries hold their shape better than frozen. They provide a much better texture in the dish.
  • Check the powder: Make sure your baking powder is fresh. This ensures the cake part rises up high and light.
  • Add citrus: Squeeze a little lemon juice over the berries. It makes the fruit flavor taste much brighter and bolder.
  • Serve with cream: Always add a scoop of vanilla ice cream. The cold cream melts into the warm, purple berry juice.
