Ingredients
4
cups
of fresh blueberries
rinsed.
1/2
cup
of granulated white sugar.
1
tablespoon
of cornstarch.
1
tablespoon
of fresh lemon juice.
1
cup
of all-purpose flour.
1
cup
of quick-cooking oats.
1
cup
of light brown sugar.
1/2
cup
of cold salted butter.
1
teaspoon
of ground cinnamon.
1/4
teaspoon
of ground nutmeg.
Instructions
Heat the Oven
Preheat your oven to 375°F. Lightly grease your baking dish with butter.
Prep the Berries
In a large bowl, toss blueberries with white sugar. Add cornstarch and lemon juice to the fruit.
Fill the Dish
Pour the blueberry mixture into the greased dish. Spread them out so they are in one layer.
Mix the Topping
Combine flour, oats, brown sugar, and spices together. Use a fork to mix them all well.
Add the Butter
Cut the cold butter into small cubes. Rub it into the flour until it looks crumbly.
Cover the Fruit
Sprinkle the oat mixture over the top of berries. Cover every corner of the dish with the topping.
Bake and Bubble
Bake for 35 to 40 minutes until very golden. The fruit juice should bubble up at the edges.
Notes
Use cold butter:
This is the most important tip. Cold butter makes the topping very crispy and light.
Cornstarch is key:
Do not skip the cornstarch. It thickens the juice so it is not watery.
Add lemon zest:
Stir in a little lemon zest. It makes the blueberries taste much more fresh.
Don't overbake:
Watch the topping closely at the end. It can go from golden to burnt very fast.
Serve it warm:
This dessert is best when it is hot. Add a scoop of cream for a perfect bite.
