Ingredients

  • 2 tablespoons of all-purpose flour.

  • 1/2 cup of sour cream.

Instructions
 

Prep the Veggies

  • First, wash your cauliflower well. Cut it into small pieces. Dice your onion, carrots, and celery. Keep them in separate piles. Small pieces cook much faster.

Sauté the Aromatics

  • Melt butter in your large pot. Use medium heat for this. Add the onion and celery. Cook until they are soft. This takes about five minutes. Do not burn the butter.

Add Cauliflower and Broth

  • Add the cauliflower to the pot. Stir in the dried parsley. Pour in the chicken broth. Bring the liquid to a boil. Then, turn the heat down low.

Simmer Until Soft

  • Cover the pot with a lid. Let it simmer for 15 minutes. The cauliflower must be very tender. Test it with a fork. It should break easily.
