Ingredients

  • 2 cups of all-purpose flour.
  • 2 cups of white sugar.
  • 3/4 cup of dark cocoa powder.
  • 2 teaspoons of baking soda.
  • 1 teaspoon of baking powder.
  • 1 teaspoon of kosher salt.
  • 1 cup of buttermilk.
  • 1/2 cup of vegetable oil.
  • 2 large eggs.
  • 2 teaspoons of vanilla extract.
  • 1 cup of hot coffee.

Instructions

Prep the Oven

  • Heat your oven to 350°F before you start. Grease your cake pans with butter.

Mix Dry Parts

  • Put flour, sugar, and cocoa in a bowl. Add the baking soda and salt.

Stir the Dry

  • Use a whisk to mix the dry parts. Make sure there are no cocoa lumps.

Add Wet Parts

  • Pour in the buttermilk, oil, and eggs. Add the vanilla extract to the bowl.

Mix the Batter

  • Use your mixer on a medium speed. Beat the batter for two minutes well.

Add Hot Coffee

  • Pour the hot coffee in very slowly. Stir the batter by hand this time.

Fill the Pans

  • Divide the thin batter between two pans. They should be even in size.

Bake the Cakes

  • Bake for 30 to 35 minutes total. A toothpick should come out clean.

Notes

  • Use hot coffee. This makes the cocoa flavor much stronger.
  • Use real buttermilk. It makes the cake very soft and moist.
  • Do not overmix. Stop mixing once the flour is gone.
  • Line pans with paper. Use parchment paper to prevent any sticking.
  • Tap the pans. This removes air bubbles before you bake.
  • Cool them fully. Wait before you add any sweet frosting.
