Ingredients

  • 3 cups of whole milk.
  • 1/2 cup of uncooked white rice.
  • 1/4 cup of white sugar.
  • 1/4 teaspoon of kosher salt.
  • 1/2 cup of semi-sweet chocolate chips.
  • 1 teaspoon of pure vanilla extract.
  • 1 tablespoon of unsalted butter.
  • Whipped cream for the top.

Instructions

Mix Milk and Rice

  • Put milk, rice, and sugar in the pan. Add the salt to the mix.

Heat the Pan

  • Turn the stove to medium-high heat. Wait for the milk to bubble.

Lower the Heat

  • Turn the heat down to very low. Cover the pan with a lid.

Simmer the Rice

  • Cook the rice for 20 to 25 minutes. Stir it every five minutes often.

Check the Texture

  • The rice should be very soft now. The milk should look thick like cream.

Add the Chocolate

  • Turn off the heat. Stir in the chocolate chips and butter.

Add the Vanilla

  • Pour in the vanilla extract last. Mix until the pudding is dark.

Serve it Warm

  • Spoon the pudding into small bowls. Add whipped cream on the top.

Notes

  • Use whole milk. This makes the pudding extra creamy.
  • Stir the bottom. This prevents the rice from burning.
  • Use short-grain rice. It has more starch for thickness.
  • Do not boil fast. Low heat keeps the milk smooth.
  • Add a cinnamon pinch. It pairs perfectly with the chocolate.
  • Eat it warm. The texture is best right away.
