Pastry brush
- 1 Quart Whole Milk
- 1 Cup Vegetable Oil
- 1 Cup Sugar
- 2 Pkgs Active Dry Yeast
- 9 Cups All-purpose Flour
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1 Tbsp Salt
- 2 Cups Melted Butter
- 2 Tbsp Ground Cinnamon
- 2 Lbs Powdered Sugar
- 1 Tsp Maple Flavoring
- 1/2 Cup Brewed Coffee
Mix the milk, oil, and sugar in a pot. Heat the mixture until it is almost boiling. Do not let it boil over the edges. Let the mixture cool until it is just warm.
Sprinkle the dry yeast over the warm liquid. Let it sit for about one minute. This allows the yeast to start working. You will see small bubbles on the surface.
Add eight cups of flour to the pot. Stir the mixture until it is very smooth. Cover the pot with a clean kitchen towel. Let the dough rise for one full hour.
Add the rest of the flour and baking items. Mix in the baking powder and baking soda. Add the salt to the dough now. Stir until everything is well combined and soft.
Roll the dough out on a floured surface. Form a large and thin rectangle with your hands. Pour the melted butter all over the top. Spread it evenly to every single corner.
Mix the cinnamon and extra sugar together. Sprinkle this mix over the melted butter. Be generous with the cinnamon for great flavor. This makes the classic dark swirl inside.
Roll the dough tightly into a long log. Start from the side furthest away from you. Pinch the seam to keep it closed well. Cut the log into thick and even slices.
Place the slices into buttered baking pans. Let them rise for another twenty minutes. Bake at 375 degrees until they turn golden. Pour the sweet glaze over them while hot.
- Use warm milk but never hot for the yeast.
- Let the dough rise in a very warm spot.
- Measure your flour using the spoon and level method.
- Do not overmix the dough after adding the flour.
- Roll the log tightly to keep the filling inside.
- Frost the rolls while they are still quite warm.
